Ingredients

  • 1 cup fresh mozzarella balls (bocconcini or ciliegine)
  • 1 cup marinated artichoke hearts, drained
  • 1 cup assorted olives (green, Kalamata, or your choice) Feel free to slice whole olives for easier eating.
Marinade Ingredients
  • ½ cup extra virgin olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste salt and pepper
  • a pinch red pepper flakes Add if you want a little kick!
Garnish
  • 2 tablespoons fresh parsley, chopped For garnish

Method
 

Preparation
  1. Drain and rinse your marinated artichokes and olives. Slice whole olives in half for easier eating.
Marinade Creation
  1. In a medium-sized bowl, combine olive oil, garlic powder, Italian seasoning, salt, pepper, and red pepper flakes. Stir well until combined.
Mix Ingredients
  1. Add the mozzarella balls, artichokes, and olives to the marinade. Gently toss until well-coated.
Marination
  1. Cover the bowl and refrigerate for at least 30 minutes to let the flavors meld.
Serve
  1. Transfer to a serving platter and sprinkle with chopped parsley. Serve with crackers, pita chips, or toasted baguette slices.

Notes

Make ahead for even better flavor; let sit overnight in an airtight container. Feel free to add other ingredients like cherry tomatoes or roasted peppers for extra flavor.
