Preparation
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time, followed by the vanilla extract until the mixture is creamy.
- In another bowl, whisk together the flour, baking soda, and salt. Gradually mix this dry blend into the wet ingredients.
- Gently fold in the semi-sweet chocolate chips and chopped Maraschino cherries.
- Using a tablespoon or cookie scoop, drop rounded balls of dough onto parchment-lined baking sheets, leaving space between each cookie.
Baking
- Bake in the preheated oven for about 10-12 minutes or until the edges are lightly golden.
- Remove from oven and let the cookies cool on the baking sheet for a few minutes before transferring them to wire racks.
Notes
Store cookies in an airtight container at room temperature for up to a week. Dough can be frozen for up to three months.
