Ingredients
  

Wet Ingredients
  • 1 cup unsalted butter, softened Let butter sit out for about 30 minutes before mixing.
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 2 large eggs Beat in one at a time.
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Mix-ins
  • 1 cup semi-sweet chocolate chips Feel free to mix different types of chocolate.
  • 1 cup Maraschino cherries, drained and chopped Make sure to drain them well.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, followed by the vanilla extract until the mixture is creamy.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually mix this dry blend into the wet ingredients.
  5. Gently fold in the semi-sweet chocolate chips and chopped Maraschino cherries.
  6. Using a tablespoon or cookie scoop, drop rounded balls of dough onto parchment-lined baking sheets, leaving space between each cookie.
Baking
  1. Bake in the preheated oven for about 10-12 minutes or until the edges are lightly golden.
  2. Remove from oven and let the cookies cool on the baking sheet for a few minutes before transferring them to wire racks.

Notes

Store cookies in an airtight container at room temperature for up to a week. Dough can be frozen for up to three months.
