Ingredients
  

For the batter
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

  • 3/4 cup maraschino cherries, drained and chopped

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  2. In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until it’s light and fluffy.
  3. Beat in the eggs, one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this to the butter mixture until fully combined.
  5. Gently fold the chocolate chips and chopped maraschino cherries into the dough.
Baking
  1. Spread the dough evenly into the prepared baking pan.
  2. Bake in the preheated oven for 25-30 minutes or until golden brown.
Cooling
  1. Let the cookie bars cool in the pan for 10-15 minutes before transferring them to a wire rack.
  2. Once cooled enough to handle, cut them into squares and enjoy!

Notes

Chilling the dough for about 30 minutes before baking can improve the texture, making them even chewier. Store the cookie bars in an airtight container for up to a week. Substitute maraschino cherries with dried cranberries or raisins if desired.
