  • 1 head head of cauliflower, broken into florets
  • 2 tablespoons olive oil

For the Sauce
  • 3 tablespoons maple syrup Adjust sweetness to preference
  • 2 tablespoons Sriracha Adjust based on spice tolerance
  • 1 tablespoon rice vinegar
  • 1 teaspoon garlic powder

Preparation
  1. Preheat the Oven: Start by getting your oven preheated to 425°F (220°C). A hot oven is key to achieving that crispy texture!
  2. Prepare the Cauliflower: On a large baking sheet, toss the cauliflower florets with olive oil and a pinch of salt. Make sure they’re evenly coated.
Cooking
  1. Roast the Cauliflower: Bake in the preheated oven for 25-30 minutes, or until they are golden brown and crispy. Shake halfway through to ensure even roasting.
  2. Whisk the Sauce: In a small bowl, combine the maple syrup, Sriracha, rice vinegar, and garlic powder. Whisk until well blended. Adjust Sriracha for more heat or add more maple syrup for sweetness.
  3. Combine and Serve: Once the cauliflower is roasted, drizzle the maple Sriracha sauce over the top. Toss to coat the cauliflower.
  4. Garnish: Serve hot, garnished with green onions, sesame seeds, and a squeeze of lime.

Notes

Don’t worry about perfection; the sauce might look lumpy but deliciousness often comes from messy kitchens! Feel free to swap cauliflower for Brussels sprouts or broccoli. Leftovers can be stored in an airtight container for up to 4 days and reheated in the oven.
