  • 1 pound carrots, peeled and cut into sticks
  • 1 tablespoon olive oil
  • to taste salt and pepper
  • 1/4 cup ricotta cheese
  • 2 tablespoons maple syrup for extra sweetness
Spices and Butter
  • 1 teaspoon cinnamon
  • 1/2 teaspoon paprika
  • 1/4 teaspoon nutmeg
  • 2 tablespoons melted butter adds richness
  • to taste extra pinch of salt
Garnish
  • to taste chopped fresh herbs such as parsley

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the carrots with olive oil, salt, and pepper until evenly coated.
  3. Spread the carrots out on a baking sheet in a single layer.
Roasting
  1. Roast the carrots for about 25-30 minutes, flipping halfway through until they are tender and slightly caramelized.
Spiced Butter Prep
  1. In a small bowl, mix together the melted butter, cinnamon, paprika, nutmeg, and an extra pinch of salt.
  2. Once the carrots are out of the oven, drizzle the spiced butter over them.
Final Assembly
  1. Add dollops of ricotta cheese and a drizzle of maple syrup on top.
  2. Garnish with fresh herbs and serve immediately.

Notes

Feel free to experiment with spices. A pinch of cayenne or chili flakes can add a nice kick. For extra crunch, toss in some nuts like pecans during the last few minutes of roasting.
