Preparation
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the carrots with olive oil, salt, and pepper until evenly coated.
- Spread the carrots out on a baking sheet in a single layer.
Roasting
- Roast the carrots for about 25-30 minutes, flipping halfway through until they are tender and slightly caramelized.
Spiced Butter Prep
- In a small bowl, mix together the melted butter, cinnamon, paprika, nutmeg, and an extra pinch of salt.
- Once the carrots are out of the oven, drizzle the spiced butter over them.
Final Assembly
- Add dollops of ricotta cheese and a drizzle of maple syrup on top.
- Garnish with fresh herbs and serve immediately.
Notes
Feel free to experiment with spices. A pinch of cayenne or chili flakes can add a nice kick. For extra crunch, toss in some nuts like pecans during the last few minutes of roasting.
