- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine ground chicken, breadcrumbs, minced garlic, onion, parsley, salt, and pepper.
- Mix until evenly combined using your hands.
- Shape the mixture into about 1-inch meatballs and place on a baking sheet lined with parchment paper.
- For the glaze, whisk together maple syrup, Dijon mustard, and soy sauce in a small bowl.
- Drizzle formed meatballs with olive oil and bake for about 15-20 minutes or until golden brown.
- Toss the meatballs in the glaze while still hot.
- Serve with veggies, over rice, or as appetizers with toothpicks.
