  • 1 cup fresh Mandarin orange segments (peeled and segmented)

  • 1/4 cup extra virgin olive oil
  • 1 tablespoon honey Use maple syrup for a vegan option.

Method
 

Preparation
  1. Start by peeling and segmenting your mandarins. Don’t worry if they break apart a little—this just makes for a chunky and fun dressing.
  2. Using a microplane grater, grate the ginger until you have about two tablespoons.
Mixing
  1. In a blender or food processor, combine the mandarin segments, grated ginger, rice vinegar, olive oil, and honey. Blend until smooth. If you prefer a chunkier dressing, pulse it a few times instead of blending it fully.
  2. Pour the dressing into a bowl and season with salt and pepper. Adjust sweetness with more honey if desired.
Serving
  1. Drizzle this delightful dressing over your salad or store it in the fridge in a sealed container for up to a week. Shake well before using.

Notes

This dressing actually gets better as it sits! Consider making it a day ahead. You can also freeze leftover dressing in ice cube trays for quick use. Adjust the recipe to suit your taste, adding more ginger or vinegar as desired.
