Preparation
- Preheat the Oven: Start by preheating your oven to 350°F (175°C).
- Prepare the Crust: In a mixing bowl, combine the crushed graham crackers, sugar, and melted butter. Stir until the mixture resembles wet sand. Press it into a 9-inch pie pan.
- Bake the Crust: Bake for 8-10 minutes until lightly browned. Keep an eye on it to avoid burning.
Filling
- Make the Filling: While your crust is baking, whisk together the sweetened condensed milk, fresh lemon juice, lemon zest, and eggs until well combined.
- Pour and Bake: Once the crust is cool, pour the filling into it. Bake for about 15 minutes until the filling is set but still jiggly in the center.
Cooling and Serving
- Chill Out: Remove from the oven and let it cool at room temperature, then chill in the fridge for at least two hours.
- Serve: Top with whipped cream or meringue and slice to serve.
Notes
Zest adds vibrant flavor; store leftover pie in the fridge covered for up to three days. Can substitute fresh lemons with bottled lemon juice in a pinch.
