Ingredients
  

For the Crust
  • 1.5 cups crushed graham crackers
  • 0.5 cups granulated sugar
  • 0.5 cups unsalted butter, melted
For the Filling
  • 1 14-ounce can sweetened condensed milk
  • 0.5 cups fresh lemon juice
  • 1 tablespoon lemon zest
  • 2 large eggs
For the Topping
  • to taste whipped cream or meringue optional, but highly recommended!

Method
 

Preparation
  1. Preheat the Oven: Start by preheating your oven to 350°F (175°C).
  2. Prepare the Crust: In a mixing bowl, combine the crushed graham crackers, sugar, and melted butter. Stir until the mixture resembles wet sand. Press it into a 9-inch pie pan.
  3. Bake the Crust: Bake for 8-10 minutes until lightly browned. Keep an eye on it to avoid burning.
Filling
  1. Make the Filling: While your crust is baking, whisk together the sweetened condensed milk, fresh lemon juice, lemon zest, and eggs until well combined.
  2. Pour and Bake: Once the crust is cool, pour the filling into it. Bake for about 15 minutes until the filling is set but still jiggly in the center.
Cooling and Serving
  1. Chill Out: Remove from the oven and let it cool at room temperature, then chill in the fridge for at least two hours.
  2. Serve: Top with whipped cream or meringue and slice to serve.

Notes

Zest adds vibrant flavor; store leftover pie in the fridge covered for up to three days. Can substitute fresh lemons with bottled lemon juice in a pinch.
