Preparation
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
Mixing
- In a large mixing bowl, sift together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- Add the eggs, milk, vegetable oil, and vanilla extract to your dry mix. Beat it all together on medium speed for about two minutes.
- Carefully stir in the boiling water until well combined.
Baking
- Pour the batter evenly into the prepared pans and bake for 30 to 35 minutes, or until a toothpick comes out clean.
- Once baked, cool the cakes in their pans for 10 minutes before flipping them out onto a wire rack to cool completely.
Frosting
- In a bowl, beat the cream cheese and butter until smooth. Gradually add the powdered sugar and vanilla, mixing until light and fluffy.
Assembly
- Place one cake layer on a serving plate and spread frosting on top. Add the second layer and frost the top and sides of the cake.
Notes
Consider adding a splash of espresso for extra depth. Decorate with fresh berries or chocolate shavings for flair.
