For the Cake
  • 1 box yellow cake mix Use a standard box mix.
  • 1 cup orange juice Freshly squeezed is recommended.
  • 1/3 cup vegetable oil
  • 3 large eggs
  • 1 unit Zest of 1 orange For added flavor.
For the Orange Creamsicle Frosting
  • 1/2 cup unsalted butter Should be softened.
  • 4 cups powdered sugar
  • 1/4 cup orange juice
  • 1 tsp vanilla extract
  • 1 unit Orange zest for garnish Optional for presentation.

Method
 

Preparation
  1. Preheat your oven to 350°F.
  2. Grease and flour two 9-inch round cake pans.
Baking the Cake
  1. In a large mixing bowl, combine the yellow cake mix, orange juice, vegetable oil, eggs, and orange zest. Beat on medium speed for about 2 minutes.
  2. Pour the batter evenly into the prepared pans.
  3. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  4. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
Making the Frosting
  1. In a medium bowl, beat the softened butter until creamy.
  2. Gradually add the powdered sugar, orange juice, and vanilla. Mix until fluffy and spreadable.
Assembling the Cake
  1. Place one cake layer on a serving plate. Spread a generous layer of frosting on top, then stack the second layer on, frosting the top and sides as well.
  2. Optionally, add some orange zest on top for garnish.

Notes

This cake is even better the next day! Store any leftovers in an airtight container at room temperature for up to three days.
