Preparation
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs, one at a time, mixing well after each addition. Then, pour in the milk and mix until just combined.
- In another bowl, whisk together the flour, baking soda, salt, and cinnamon. Gradually add this dry mixture to the wet ingredients, stirring until just combined.
- Gently fold in the diced apples and half of the caramel sauce, saving the other half for drizzling later.
Baking
- Divide the batter evenly into the muffin cups, filling each about 3/4 full.
- Bake in your preheated oven for about 20-25 minutes, or until a toothpick comes out clean.
- Let them cool slightly, then drizzle the remaining caramel sauce over the top.
Notes
Great apple options include Honeycrisp and Fuji for a sweeter twist. You can also reduce sugar by using less caramel sauce for drizzling. These muffins freeze beautifully for later enjoyment.
