Muffin Base
  • 1 cup diced apples (Granny Smith)
  • 1/2 cup caramel sauce (store-bought or homemade) No judgment here!
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs, one at a time, mixing well after each addition. Then, pour in the milk and mix until just combined.
  4. In another bowl, whisk together the flour, baking soda, salt, and cinnamon. Gradually add this dry mixture to the wet ingredients, stirring until just combined.
  5. Gently fold in the diced apples and half of the caramel sauce, saving the other half for drizzling later.
Baking
  1. Divide the batter evenly into the muffin cups, filling each about 3/4 full.
  2. Bake in your preheated oven for about 20-25 minutes, or until a toothpick comes out clean.
  3. Let them cool slightly, then drizzle the remaining caramel sauce over the top.

Notes

Great apple options include Honeycrisp and Fuji for a sweeter twist. You can also reduce sugar by using less caramel sauce for drizzling. These muffins freeze beautifully for later enjoyment.
