Prepare the Base
- In a bowl, combine graham cracker crumbs, melted butter, sugar, and pinch of salt. Mix until combined.
- Press the mixture firmly into the bottom of a 9-inch springform pan.
Whip Up the Cheesecake Filling
- In a large mixing bowl, beat the softened cream cheese with powdered sugar until smooth.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipping cream into the cream cheese mixture.
- Add lime juice, lime zest, vanilla extract, and gelatin (if using).
Assemble the Cheesecake
- Pour the cheesecake mixture over the prepared crust and smooth the top.
- Chill in the fridge for 4-6 hours or overnight.
Make the Lime Glaze
- Mix powdered sugar and lime juice until smooth. Adjust consistency as needed.
- Drizzle the glaze over the chilled cheesecake.
Slice and Serve
- Remove the sides of the springform pan, slice, and serve.
Notes
Use a microplane to zest limes effectively. Leftover filling can be used separately, and gelatin can be substituted with whipped topping if short on time.
