Ingredients
  

For the Cheesecake Base
  • 1.5 cups graham cracker crumbs
  • 0.5 cups unsalted butter, melted
  • 0.33 cups sugar
  • 1 pinch salt
For the Cheesecake Filling
  • 2 cups cream cheese, softened
  • 1 cups powdered sugar
  • 1 cups heavy whipping cream
  • 0.75 cups fresh lime juice (about 4-5 limes)
  • 2 zest zest of two limes
  • 1 tsp vanilla extract
  • 1.5 teaspoons gelatin (optional for a firmer mousse) Optional
For the Lime Glaze
  • 1 cups powdered sugar
  • 2-3 tablespoons fresh lime juice
  • 1 zest lime zest for garnish For garnish

Method
 

Prepare the Base
  1. In a bowl, combine graham cracker crumbs, melted butter, sugar, and pinch of salt. Mix until combined.
  2. Press the mixture firmly into the bottom of a 9-inch springform pan.
Whip Up the Cheesecake Filling
  1. In a large mixing bowl, beat the softened cream cheese with powdered sugar until smooth.
  2. In a separate bowl, whip the heavy cream until stiff peaks form.
  3. Gently fold the whipping cream into the cream cheese mixture.
  4. Add lime juice, lime zest, vanilla extract, and gelatin (if using).
Assemble the Cheesecake
  1. Pour the cheesecake mixture over the prepared crust and smooth the top.
  2. Chill in the fridge for 4-6 hours or overnight.
Make the Lime Glaze
  1. Mix powdered sugar and lime juice until smooth. Adjust consistency as needed.
  2. Drizzle the glaze over the chilled cheesecake.
Slice and Serve
  1. Remove the sides of the springform pan, slice, and serve.

Notes

Use a microplane to zest limes effectively. Leftover filling can be used separately, and gelatin can be substituted with whipped topping if short on time.
