Ingredients
  

For the Chicken
  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons lemon pepper seasoning store-bought or homemade
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt to taste
For the Wraps
  • 4 whole wheat or regular tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • ½ cup shredded cheese (cheddar or your choice)
For the Lemon Pepper Sauce
  • ½ cup Greek yogurt
  • 2 tablespoons lemon pepper seasoning
  • 1 tablespoon lemon juice
  • Salt to taste

Method
 

Marinating the Chicken
  1. In a bowl, mix the chicken breasts with olive oil, lemon juice, and lemon pepper seasoning. Let it sit for at least 15 minutes.
Cooking the Chicken
  1. Heat a grill pan or skillet over medium heat. Cook the marinated chicken for about 6-7 minutes on each side or until it’s fully cooked and has a golden-brown crust.
Making the Lemon Pepper Sauce
  1. While the chicken is cooking, mix together Greek yogurt, lemon pepper seasoning, lemon juice, and a pinch of salt in a small bowl.
Preparing the Wraps
  1. Once the chicken is cooked, let it rest for a few minutes before slicing it into thin strips.
Assembling the Wraps
  1. On each tortilla, lay out the lettuce, diced tomatoes, chicken strips, and a generous drizzle of the lemon pepper sauce.
Finishing Touches
  1. Fold the sides of the tortilla in and roll it tightly from the bottom up. If you want to toast them, pop them on a hot skillet for a minute.
  2. Cut the wraps in half and serve with extra sauce on the side for dipping.

Notes

Don't skip the marinade for a flavor boost! Feel free to add veggies like cucumbers or bell peppers to customize the wraps.
