Ingredients
  

For the Lemon Herb Butter Steak
  • 2 pieces Ribeye steaks (1-inch thick) Let warm up at room temperature before cooking
  • 4 tablespoons unsalted butter, softened For mixing with herbs and lemon
  • 1 fruit lemon, zest and juice Freshly squeezed for best flavor
  • 2 cloves garlic, minced Adds flavor to the butter
  • 1 tablespoon fresh parsley, chopped Optional, for garnish
  • 1 tablespoon fresh thyme leaves Fresh preferred
  • to taste salt and pepper For seasoning steaks
For the Fluffy Mashed Potatoes
  • 2 pounds Yukon Gold potatoes, peeled and cubed For creamy texture
  • 4 tablespoons unsalted butter Adds richness
  • ½ cup milk Add more for desired creaminess
  • to taste salt For seasoning
  • to taste fresh chives, for garnish Optional

Method
 

Cooking the Mashed Potatoes
  1. Place the peeled and cubed Yukon Gold potatoes in a large pot and cover with cold water.
  2. Add a pinch of salt and bring to a boil.
  3. Reduce heat and simmer until fork-tender, about 15-20 minutes.
  4. Drain potatoes and return to pot. Add butter and milk, then mash to your desired texture. Season with salt.
Cooking the Steak
  1. Take the steaks out of the fridge 30 minutes before cooking.
  2. Season each steak generously with salt and pepper.
  3. Mix softened butter, lemon zest, lemon juice, garlic, parsley, and thyme in a bowl.
  4. Heat a cast-iron skillet or grill to medium-high heat and add a splash of oil.
  5. Sear steaks for 4-5 minutes on each side for medium-rare, adjusting time for preferred doneness.
Herb Butter Bliss
  1. Remove steaks from skillet and let rest for 5 minutes.
  2. Top steaks with lemon herb butter before serving.
Plating
  1. Serve the steak alongside the fluffy mashed potatoes, garnishing with fresh chives if desired.

Notes

Don’t worry if your mashed potatoes are a little lumpy; it adds character! You can jazz them up with garlic or cream cheese too.
