Method
Cooking the Mashed Potatoes
- Place the peeled and cubed Yukon Gold potatoes in a large pot and cover with cold water.
- Add a pinch of salt and bring to a boil.
- Reduce heat and simmer until fork-tender, about 15-20 minutes.
- Drain potatoes and return to pot. Add butter and milk, then mash to your desired texture. Season with salt.
Cooking the Steak
- Take the steaks out of the fridge 30 minutes before cooking.
- Season each steak generously with salt and pepper.
- Mix softened butter, lemon zest, lemon juice, garlic, parsley, and thyme in a bowl.
- Heat a cast-iron skillet or grill to medium-high heat and add a splash of oil.
- Sear steaks for 4-5 minutes on each side for medium-rare, adjusting time for preferred doneness.
Herb Butter Bliss
- Remove steaks from skillet and let rest for 5 minutes.
- Top steaks with lemon herb butter before serving.
Plating
- Serve the steak alongside the fluffy mashed potatoes, garnishing with fresh chives if desired.
Notes
Don’t worry if your mashed potatoes are a little lumpy; it adds character! You can jazz them up with garlic or cream cheese too.
