Ingredients
  

For the Chicken
  • 1 lb chicken breast, sliced
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 each zest and juice of 1 lemon
  • 1 teaspoon dried oregano

For the Roasted Bell Peppers
  • 2 each bell peppers (red, yellow, or a mix), sliced
  • 1 tablespoon olive oil
  • to taste Salt and pepper
For the Feta Tzatziki
  • 1 cup Greek yogurt
  • ½ cup crumbled feta cheese
  • 1 each cucumber, grated and drained
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • to taste Salt and pepper
  • to taste Fresh dill (optional)
Other
  • to taste Pita bread (store-bought or homemade)
  • to taste Fresh greens (lettuce or spinach) for garnish

Method
 

Preparation
  1. In a bowl, combine sliced chicken, olive oil, minced garlic, lemon zest, lemon juice, oregano, salt, and pepper. Mix well and let sit for at least 15 minutes.
Roasting Bell Peppers
  1. Preheat your oven to 425°F (220°C). Toss sliced bell peppers with olive oil, salt, and pepper, then spread them on a baking sheet. Roast for about 20 minutes, or until they're soft and slightly charred.
Cooking Chicken
  1. In a skillet over medium heat, add the marinated chicken and cook until golden brown and cooked through, about 7-10 minutes.
Making Feta Tzatziki
  1. While the chicken cooks, mix Greek yogurt, crumbled feta, grated cucumber, olive oil, minced garlic, salt, pepper, and fresh dill (if using) in a bowl. Stir well until everything is combined.
Assembling Pitas
  1. Warm your pita bread. Fill each pita with a generous amount of the lemon-garlic chicken, roasted peppers, fresh greens, and a big dollop of feta tzatziki.

Notes
