Lemon-Garlic Chicken Pitas

Ingredients
  

For the Chicken Marinade
  • 2 pieces boneless, skinless chicken breasts Choose medium-sized breasts for even cooking.
  • 1 whole lemon (zested and juiced)
  • 4 cloves garlic (minced) Adjust garlic according to taste.
  • 1 teaspoon dried oregano
  • 1 splash olive oil For marinating the chicken.
For the Feta Tzatziki
  • 1/2 cup Greek yogurt Use full-fat for richer taste.
  • 1/2 cup crumbled feta cheese
  • 1 splash lemon juice Optional, for added tang.
  • 1 teaspoon lemon zest Optional, for extra flavor.
For Assembly
  • 1 cup roasted bell peppers (sliced) You can use store-bought or homemade roasted peppers.
  • 4 pieces Pita bread Warm them up before stuffing.
  • 1 tablespoon olive oil For cooking the chicken.
  • 1 bunch fresh parsley (for garnish) Chopped or whole, as preferred.

Method
 

Marinate the Chicken
  1. In a bowl, mix the lemon juice, lemon zest, minced garlic, oregano, and a splash of olive oil.
  2. Add the chicken breasts to the marinade and let it sit in the fridge for at least 30 minutes.
Cook the Chicken
  1. Heat a skillet over medium-high heat and add a little olive oil.
  2. Remove the chicken from the marinade, shaking off excess, and cook for about 6-7 minutes on each side until fully cooked and golden brown.
  3. Remove the chicken from the skillet and let it rest for a few moments before slicing.
Prepare the Feta Tzatziki
  1. In a small bowl, combine Greek yogurt and crumbled feta cheese.
  2. If desired, add a little more lemon juice and zest for that tangy kick and mix well until creamy.
Assemble the Pitas
  1. Slice the cooked chicken and stuff into warm pita pockets.
  2. Top with roasted bell peppers and generous dollops of feta tzatziki.
Garnish & Serve
  1. Sprinkle some fresh parsley on top before serving.

Notes

To elevate your pitas, try adding paprika or cumin. Serve with a side of roasted potatoes or a salad for a complete meal.
