Marinate the Chicken
- In a bowl, mix the lemon juice, lemon zest, minced garlic, oregano, and a splash of olive oil.
- Add the chicken breasts to the marinade and let it sit in the fridge for at least 30 minutes.
Cook the Chicken
- Heat a skillet over medium-high heat and add a little olive oil.
- Remove the chicken from the marinade, shaking off excess, and cook for about 6-7 minutes on each side until fully cooked and golden brown.
- Remove the chicken from the skillet and let it rest for a few moments before slicing.
Prepare the Feta Tzatziki
- In a small bowl, combine Greek yogurt and crumbled feta cheese.
- If desired, add a little more lemon juice and zest for that tangy kick and mix well until creamy.
Assemble the Pitas
- Slice the cooked chicken and stuff into warm pita pockets.
- Top with roasted bell peppers and generous dollops of feta tzatziki.
Garnish & Serve
- Sprinkle some fresh parsley on top before serving.
Notes
To elevate your pitas, try adding paprika or cumin. Serve with a side of roasted potatoes or a salad for a complete meal.
