Ingredients
  

For the Marinade and Chicken
  • 1 lb boneless, skinless chicken breasts
  • 1 whole lemon (zest and juice)
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano

  • 1 tablespoon olive oil
For Serving
  • 4 whole whole wheat pitas Can warm in the oven or stovetop
  • 1 cup Greek yogurt
  • ½ cup feta cheese, crumbled
  • 1 cup cucumber, diced
  • 1 whole bell pepper, sliced and roasted
  • to garnish Fresh parsley Optional

Method
 

Preparation
  1. Begin by marinating your chicken. In a bowl, mix the lemon juice, lemon zest, minced garlic, oregano, olive oil, salt, and pepper. Add the chicken and allow it to marinate for at least 30 minutes (or up to 2 hours for more flavor).
Cooking
  1. Preheat a grill or skillet over medium-high heat. Cook the marinated chicken for about 6-7 minutes on each side or until fully cooked. Let it rest for a few minutes before slicing.
  2. In a separate bowl, combine the Greek yogurt, crumbled feta, diced cucumber, and a pinch of salt and pepper. Stir well to make your feta tzatziki.
Assembly
  1. Warm your whole wheat pitas. Fill each pita with sliced chicken, roasted bell peppers, and a generous scoop of feta tzatziki.
  2. Sprinkle with fresh parsley if desired, and serve alongside a light salad or some crunchy veggie sticks.

Notes

Prepare the chicken and tzatziki in advance to save time. Both can be stored in the fridge for up to three days. Feel free to experiment with other vegetables like zucchini or red onions when roasting.
