Preparation
- Season the chicken breasts with salt and black pepper on both sides.
- In one bowl, place the flour. In another bowl, beat the eggs and mix in the Parmesan cheese.
Cooking
- Coat each chicken breast in the flour and shake off excess flour, then dip them into the egg mixture.
- Heat the butter and olive oil in a large skillet over medium-high heat, then add the chicken.
- Cook for 5-7 minutes on each side until golden brown.
- Remove the chicken and add the chicken broth and lemon juice to the skillet, scraping any brown bits from the bottom.
- Let the sauce simmer for 4-5 minutes to reduce.
- Return the chicken to the skillet and spoon the sauce over it. Cook for an additional couple of minutes.
- Finish with a sprinkle of fresh parsley.
Serving
- Ladle the sauce generously over the chicken and serve with rice or pasta.
Notes
If the sauce looks lumpy, it’s part of the charm of homemade cooking. Adding a splash of white wine can enhance the sauce. For quicker prep, use thinner chicken cutlets.
