  • 4 pieces boneless, skinless chicken breasts
  • to taste Salt and black pepper For seasoning
  • 1 cup all-purpose flour For dredging
  • 2 large eggs Beaten
  • ½ cup grated Parmesan cheese
  • cup unsalted butter
  • 1 tablespoon olive oil
  • 1 cup chicken broth
  • Juice of 2 lemons freshly squeezed Do not use bottled lemon juice
  • 2 tablespoons fresh parsley, chopped Optional for garnish

Method
 

Preparation
  1. Season the chicken breasts with salt and black pepper on both sides.
  2. In one bowl, place the flour. In another bowl, beat the eggs and mix in the Parmesan cheese.
Cooking
  1. Coat each chicken breast in the flour and shake off excess flour, then dip them into the egg mixture.
  2. Heat the butter and olive oil in a large skillet over medium-high heat, then add the chicken.
  3. Cook for 5-7 minutes on each side until golden brown.
  4. Remove the chicken and add the chicken broth and lemon juice to the skillet, scraping any brown bits from the bottom.
  5. Let the sauce simmer for 4-5 minutes to reduce.
  6. Return the chicken to the skillet and spoon the sauce over it. Cook for an additional couple of minutes.
  7. Finish with a sprinkle of fresh parsley.
Serving
  1. Ladle the sauce generously over the chicken and serve with rice or pasta.

Notes

If the sauce looks lumpy, it’s part of the charm of homemade cooking. Adding a splash of white wine can enhance the sauce. For quicker prep, use thinner chicken cutlets.
