For the Cake
  • 1.75 cups all-purpose flour
  • 1.75 cups granulated sugar
  • 0.75 cups unsweetened cocoa powder
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk or whatever you have on hand
  • 0.5 cups vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
For the Chocolate Frosting
  • 1 cup unsalted butter softened
  • 3.5 cups powdered sugar
  • 0.5 cups unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 0.25 cups milk or more for desired consistency

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. In a large bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk to combine.
  4. Add the eggs, milk, oil, and vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes, then stir in the boiling water.
  5. Pour the batter evenly into your prepared pans.
Baking
  1. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  2. Allow the cakes to cool in the pans for about 10 minutes, then remove from pans and cool completely on a wire rack.
Frosting
  1. In a large bowl, cream the softened butter until fluffy. Gradually add the powdered sugar and cocoa powder. Mix in the vanilla and enough milk to reach your preferred frosting consistency.
Assembly
  1. Place one layer of cake on a plate, spread a generous amount of frosting on top, then add the second layer.
  2. Frost the top and sides of the cake and decorate as desired.
