Preparation
- In a large bowl, beat the softened cream cheese with an electric mixer until smooth.
- Add the powdered sugar, key lime juice, and zest. Mix until well combined, tasting to ensure the flavors are balanced.
- Cover the bowl with plastic wrap and refrigerate for about 30 minutes.
- Once chilled, use a small cookie scoop or your hands to form the mixture into bite-sized balls.
- Roll the truffles in the graham cracker crumbs.
Coating
- Melt the white chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
- Dip each truffle into the melted chocolate, allowing the excess to drip off. Sprinkle lime zest on top before the chocolate sets.
- Place the truffles on a parchment-lined baking sheet.
- Return the truffles to the fridge for about 15 minutes or until the chocolate is firm.
Serving
- Serve the truffles chilled to family and friends or savor them alone.
Notes
Chill for the right consistency. You can experiment with flavored chocolate for the coating. These truffles can be made in advance and stored in the fridge for up to a week or frozen for longer storage.
