Ingredients
  

Truffle Filling

  • ½ cup powdered sugar
  • 2 tablespoons key lime juice Fresh is best!

  • 8 ounces white chocolate, chopped For coating the truffles.
  • Cocoa powder for dusting

Method
 

Preparation
  1. In a mixing bowl, combine softened cream cheese, powdered sugar, key lime juice, lime zest, and a pinch of salt. Beat until smooth and creamy.
  2. Cover and refrigerate the mixture for about 30 minutes to firm it up.
  3. Scoop out small amounts (about 1 inch) and roll into balls. Place on a parchment-lined baking sheet.
Chocolate Coating
  1. Melt the white chocolate in a heat-proof bowl over simmering water, stirring until smooth. Allow to cool slightly.
  2. Dip each truffle into the melted chocolate, letting excess drip off. Dust with cocoa powder while still wet.
Final Set
  1. Refrigerate the coated truffles for another 30-45 minutes until set.
