  • 1 cup light corn syrup Can be substituted with honey or a mix of sugar and water.
  • 3/4 cup heavy cream
  • 1/2 tsp vanilla extract For added flavor.
  • 1/2 cup unsalted butter
  • Powdered sugar (for dusting) To prevent sticking.

Method
 

Preparation
  1. Gather a large saucepan, a wooden spoon, and a candy thermometer.
  2. In the saucepan, combine the sugar, corn syrup, and cream.
Cooking
  1. Stir the mixture over medium heat until it reaches 240°F on your candy thermometer.
  2. Once the right temperature is reached, remove from heat and add the butter and vanilla extract.
  3. Stir until the butter is melted and the mixture is well blended.
Pulling and Shaping
  1. Let the mixture cool for about 15 minutes at room temperature.
  2. Dust your hands with powdered sugar and begin pulling and stretching the candy until it lightens in color, about 10 to 15 minutes.
  3. Shape it into a log or cut it into bite-sized pieces, dusting them with powdered sugar to avoid sticking.
  4. Store in an airtight container for later.
