Ingredients
  

Pasta and Proteins
  • 12 oz fresh tortellini cheese or meat, your choice
  • 6 oz salami, diced adds flavor
  • 8 oz mozzarella balls, halved adds creaminess
Vegetables
  • 1 cup cherry tomatoes, halved for bursts of flavor
  • 1 cup cucumber, diced for crunch
  • 1/2 cup red onion, thinly sliced optional for less onion flavor
  • 1/4 cup fresh basil, chopped adds freshness
Dressing
  • 1/4 cup olive oil for richness
  • 2 tablespoons red wine vinegar for tanginess
  • to taste Salt and pepper season to preference

Method
 

Cooking the Tortellini
  1. Bring a large pot of salted water to a gentle boil. Add the tortellini and cook according to the package instructions, usually about 3-5 minutes until they are tender but still a little firm.
  2. Drain and rinse with cold water to stop the cooking process.
Mixing Ingredients
  1. In a large bowl, combine the cherry tomatoes, cucumber, red onion, and fresh basil. Toss together.
  2. Add the diced salami and halved mozzarella balls, mixing everything well.
Adding Dressing
  1. In a separate small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.
  2. Drizzle this mixture over the salad and gently toss together.
Chilling
  1. Allow the salad to chill in the fridge for at least 30 minutes to help the flavors meld together.

Notes

Make it ahead for meal prep and serve cold for the best flavor. Feel free to substitute ingredients as desired.
