  • 1 lb Italian sausage (mild or spicy, your call)
  • 4 medium potatoes, diced
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 cup heavy cream Can use half-and-half or milk as substitutes
  • 1 cup kale or spinach For an extra health boost
  • 1 tsp Italian seasoning
  • to taste Salt and pepper

  • Grated Parmesan cheese For topping, optional

Method
 

Cooking
  1. In a large pot, heat over medium heat and add the Italian sausage. Break it up with a wooden spoon as it cooks until golden brown.
  2. Once the sausage is cooking, add the chopped onion and minced garlic. Stir and let the flavors combine.
  3. Stir in the diced potatoes, coating them with the sausage mix.
  4. Pour in the chicken broth and bring to a boil. Reduce heat and let simmer for 15-20 minutes until potatoes are tender.
  5. Add the heavy cream and leafy greens. Stir and simmer for another 5 minutes.
  6. Sprinkle in the Italian seasoning and season with salt and pepper to taste. Serve hot.
  7. Optionally, sprinkle some grated Parmesan cheese on top before serving.

Notes

You can use pre-cooked sausage to save time. If you don't have heavy cream, use half-and-half or milk. A splash of white wine can enhance the flavor.
