- In a large pot, heat over medium heat and add the Italian sausage. Break it up with a wooden spoon as it cooks until golden brown.
- Once the sausage is cooking, add the chopped onion and minced garlic. Stir and let the flavors combine.
- Stir in the diced potatoes, coating them with the sausage mix.
- Pour in the chicken broth and bring to a boil. Reduce heat and let simmer for 15-20 minutes until potatoes are tender.
- Add the heavy cream and leafy greens. Stir and simmer for another 5 minutes.
- Sprinkle in the Italian seasoning and season with salt and pepper to taste. Serve hot.
- Optionally, sprinkle some grated Parmesan cheese on top before serving.
Notes
You can use pre-cooked sausage to save time. If you don't have heavy cream, use half-and-half or milk. A splash of white wine can enhance the flavor.
