Ingredients
  

Fresh Vegetables
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1 medium bell pepper (red, yellow, or green), diced
  • 1/2 small red onion, finely chopped
Salad Mix-ins
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1/2 cup Kalamata olives, pitted and chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
Dressing
  • 1/4 cup olive oil
  • 3 tbsp red wine vinegar
  • Salt and pepper, to taste

Method
 

Preparation
  1. Start by prepping your veggies. Dice the cucumber, bell pepper, and red onion into nice, bite-sized pieces. Halve the cherry tomatoes.
  2. In a large bowl, combine the chopped tomatoes, cucumber, bell pepper, red onion, chickpeas, olives, feta, and parsley.
Dressing
  1. In a small bowl, whisk together the olive oil, red wine vinegar, and a pinch of salt and pepper. Drizzle this dressing over your salad and give it a gentle toss.
Chill and Serve
  1. Let your salad sit in the fridge for about 15-20 minutes to enhance the flavor.

Notes

Chickpeas, grilled chicken, or turkey can be added for additional protein. Store leftovers in an airtight container in the fridge for up to three days. For a gluten-free option, skip the chickpeas if desired.
