Ingredients

For the Salad
  • 1 head romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup bell peppers (any color), diced
  • 1/2 cup red onion, diced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1 cup mozzarella balls
  • 1/2 cup Italian dressing (store-bought or homemade)
  • Salt and pepper to taste

Method

Preparation
  1. Start by chopping the romaine lettuce, then toss it into a large salad bowl.
  2. Dice the cucumbers, bell peppers, and red onion. Make sure to cut them small enough to create a harmonious mix.
Mixing
  1. Add the halved cherry tomatoes, sliced olives, and mozzarella balls to the bowl.
Dressing
  1. Drizzle Italian dressing over your salad and toss gently until everything is evenly coated.
  2. Season with salt and pepper to taste, remembering to add it after the olives.
Serving
  1. Serve the salad immediately for the freshest crunch.
  2. If prepping ahead, store the dressing separately until ready to serve.

Notes

Try adding chickpeas or pepitas for added crunch and protein. Store-bought dressing is acceptable if you're short on time, but homemade dressing is always a great option.
