Ingredients
  

Wrapper and Noodles
  • 8-10 sheets Rice paper wrappers For wrapping the fillings
  • 8 oz Rice noodles Cook as per package directions
Fillings
  • 2 cups Assorted veggies (carrots, bell peppers, cucumber) Chopped into thin strips
  • 1 cup Herbs (cilantro and mint) For added flavor
  • 1 cup Shrimp or tofu Optional protein; cooked and sliced
  • to taste Soy sauce For dipping

Method
 

Preparation
  1. Chop your veggies into thin strips.
  2. If using protein, make sure it's cooked and sliced.
Cooking Noodles
  1. Cook the rice noodles as per package instructions until al dente, then drain and set aside.
Soften Rice Paper
  1. Fill a shallow dish with warm water. Dip one rice paper wrapper in the water for 10-15 seconds until pliable.
Rolling
  1. Place the softened rice paper wrapper on a clean surface. Add a small amount of noodles, assorted veggies, and herbs in the center.
  2. Fold in the sides and roll from the bottom until tightly wrapped.
Air Frying
  1. Preheat your air fryer to 375°F (190°C). Spray the rolls with cooking spray or brush with oil.
  2. Arrange them in a single layer in the air fryer basket and cook for 8-10 minutes until golden brown, flipping halfway through.
Serving
  1. Serve warm with a side of soy sauce or your favorite dipping sauce.

Notes

Keep filling light for the best results. Ensure rolls are well-coated with oil for maximum crunch.
