Ingredients
  

For the Salmon
  • 4 fillets 4 salmon fillets (about 6 oz each)
  • 2 tablespoons 2 tablespoons olive oil
  • 1 teaspoon 1 teaspoon garlic salt
  • 1/2 teaspoon 1/2 teaspoon paprika
  • to taste Freshly cracked black pepper
For the Crunchy Rice
  • 2 cups 2 cups cooked rice (white or brown)
  • 1 cup 1 cup panko breadcrumbs
  • 1/2 cup 1/2 cup grated Parmesan cheese
  • 2 tablespoons 2 tablespoons butter, melted
  • to taste Salt
Garnish
  • Chopped fresh parsley
  • Lemon wedges

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix the olive oil, garlic salt, paprika, and black pepper. Brush this mixture all over the salmon fillets.
  3. In a separate bowl, combine the cooked rice, panko breadcrumbs, grated Parmesan, melted butter, and a pinch of salt. Mix well.
  4. Place the salmon fillets on a lined baking sheet and top with a generous amount of the rice mixture, pressing it down slightly.
Cooking
  1. Bake in the preheated oven for about 15-20 minutes or until the salmon is cooked through and the topping is golden and crispy.
  2. Serve your crispy salmon on a plate, garnished with fresh parsley and lemon wedges.

Notes

Don’t skip the panko for the crunch. Ovens can vary, so keep an eye on the salmon to avoid overcooking. Leftovers can be stored and reheated.
