  • 1.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 1 teaspoon ground cinnamon a dash of warmth
  • 0.25 teaspoon ground nutmeg optional, but highly recommended
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter softened
  • 0.75 cup granulated sugar
  • 2 large eggs
  • 0.5 cup milk
  • 0.5 cup honey the star of the show!
  • 0.5 cup chopped walnuts or almonds optional, for some crunch

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9-inch round cake pan or line it with parchment paper.
  3. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg (if using), and salt. Set it aside.
  4. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  5. Beat in the eggs, one at a time, mixing well after each addition. Pour in the milk and honey.
  6. Gradually mix in the dry ingredients until just combined.
  7. Fold in the nuts with a spatula.
  8. Pour the batter into your prepared pan and smooth the top.
Baking
  1. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  2. Let the cake cool in the pan for about 10 minutes before flipping it out onto a wire rack to cool completely.
Serving
  1. Slice and serve! Enjoy it as-is, or top with more honey or whipped cream.

Notes

Use quality honey for the best flavor. Allowing the cake to cool completely helps it settle and makes it easier to slice without crumbling. Leftovers can be stored in an airtight container for up to two days at room temperature, or a week in the fridge.
