Ingredients

For the Bruschetta
  • 1 loaf large loaf of crusty bread (ciabatta or sourdough) Choose a good quality loaf for best results.
  • 8 oz fresh burrata cheese Burrata is preferred for its creamy texture.
  • 2 cups cherry tomatoes, halved Use ripe cherry tomatoes for the best flavor.
  • 2 tablespoons olive oil For drizzling on bread and for mixing with tomatoes.
  • 2 tablespoons balsamic vinegar Adds acidity and flavor to the tomatoes.
  • to taste Fresh basil leaves Add fresh basil for garnish and flavor.
  • to taste Salt and pepper Used to season the tomato mixture.

Method

Preparation
  1. Preheat your oven to 400°F (200°C). Slice the crusty bread into 1-inch thick pieces and arrange them on a baking sheet.
  2. Drizzle a bit of olive oil on each slice and toast in the oven until golden and crispy—about 8-10 minutes.
Mixing the Topping
  1. In a bowl, toss the halved cherry tomatoes with olive oil, balsamic vinegar, salt, and pepper. Let them sit for about 10 minutes to help the flavors meld together.
Assembly
  1. Once the bread is crispy, place a generous slice of burrata on each piece of toasted bread, followed by the tomato mixture.
  2. Garnish with fresh basil leaves. The result should look as good as it tastes!
Serving
  1. Serve your burrata bruschetta warm and enjoy every bite!

Notes

Don't worry about perfection! If your tomatoes are a little squishy, it just means they’re ripe and ready to explode with flavor. For an extra touch, drizzle your bruschetta with a bit of honey before serving.
