Method
 

Preparation
  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and sauté until translucent.
  3. Stir in the minced garlic and cook for an additional minute.
Cooking
  1. Add the ground beef or turkey, breaking it apart and cooking until browned.
  2. Sprinkle in chili powder and cumin, stirring to coat the meat.
  3. Pour in the diced tomatoes, kidney beans, beef broth, and bell peppers.
  4. Bring to a boil, then reduce heat and simmer for at least 1 hour, stirring occasionally.
