Preparation
- In a bowl, whisk together honey, soy sauce, ginger, olive oil, and a pinch of salt and pepper to prepare the marinade.
- Place the salmon fillets in a shallow dish and pour the marinade over them. Let it sit.
Cooking
- Preheat your grill or grill pan over medium-high heat, or preheat oven to 400°F (204°C).
- Once the grill is hot, place the salmon fillets skin-side down and cook for about 5-6 minutes on each side, basting with leftover marinade.
- In the last couple of minutes, add the diced pineapple onto the grill to caramelize.
Serving
- Plate the salmon and pineapple once cooked. Garnish with sliced green onions and sesame seeds if desired.
Notes
Don’t overcook the salmon; it should flake easily with a fork. This dish freezes exceptionally well. For substitutes, honey can be replaced with maple syrup or agave nectar.
