  • 4 fillets salmon fillets The star of the show!
  • 1 cup fresh pineapple, diced Freshness alert! Canned works too if you’re in a pinch.
  • 1/4 cup honey Sweetness overload in the best way.
  • 2 tablespoons soy sauce Because we love that umami flavor.
  • 1 tablespoon fresh ginger, grated Nothing like a zesty kick.
  • 2 tablespoons olive oil
  • to taste salt and pepper
  • optional: sliced green onions and sesame seeds for garnish

Method
 

Preparation
  1. In a bowl, whisk together honey, soy sauce, ginger, olive oil, and a pinch of salt and pepper to prepare the marinade.
  2. Place the salmon fillets in a shallow dish and pour the marinade over them. Let it sit.
Cooking
  1. Preheat your grill or grill pan over medium-high heat, or preheat oven to 400°F (204°C).
  2. Once the grill is hot, place the salmon fillets skin-side down and cook for about 5-6 minutes on each side, basting with leftover marinade.
  3. In the last couple of minutes, add the diced pineapple onto the grill to caramelize.
Serving
  1. Plate the salmon and pineapple once cooked. Garnish with sliced green onions and sesame seeds if desired.

Notes

Don’t overcook the salmon; it should flake easily with a fork. This dish freezes exceptionally well. For substitutes, honey can be replaced with maple syrup or agave nectar.
