Honey Garlic Salmon and Brussels Sprouts

Ingredients
  

For the Salmon and Brussels Sprouts
  • 2 fillets 2 salmon fillets (about 6 ounces each)
  • 1 pound 1 pound Brussels sprouts, halved
  • 3 tablespoons 3 tablespoons olive oil
  • Salt and pepper, to taste
For the Honey Garlic Sauce
  • ¼ cup ¼ cup honey
  • 3 cloves 3 cloves garlic, minced
  • 2 tablespoons 2 tablespoons soy sauce
  • 1 tablespoon 1 tablespoon apple cider vinegar
  • ½ teaspoon ½ teaspoon red pepper flakes (optional for a little kick)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) to prepare for roasting.
  2. In a large bowl, toss the halved Brussels sprouts with 2 tablespoons of olive oil, salt, and pepper.
  3. Spread the Brussels sprouts on a baking sheet.
Cooking
  1. Roast the Brussels sprouts in the oven for about 15 minutes, or until they are golden brown and tender.
  2. While the sprouts are roasting, mix together the honey, minced garlic, soy sauce, apple cider vinegar, and red pepper flakes in a small bowl to make the honey garlic sauce.
  3. After the Brussels sprouts have roasted for 15 minutes, remove the baking sheet from the oven and place the salmon fillets in the center.
  4. Brush the tops of the salmon fillets with the honey garlic sauce, saving some sauce for later.
  5. Return the baking sheet to the oven and roast for another 10-15 minutes, or until the salmon flakes easily with a fork and the Brussels sprouts are crispy.
  6. Remove from the oven, drizzle additional honey garlic sauce over the salmon and Brussels sprouts.

Notes

If Brussels sprouts aren't your favorite, you can easily substitute them for green beans or asparagus. Consider adding citrus zest to reduce fishy flavors. Feel free to toss in other veggies you have lying around!
