Ingredients
  

For the Cake
  • 1 ¾ cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
For the Frosting
  • 1 cup unsweetened cocoa powder
  • ½ cup butter, softened
  • 3 cups powdered sugar
  • ½ cup milk
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, whisk together the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, milk, vegetable oil, and vanilla extract to the dry mix. Beat with an electric mixer on medium speed for about 2 minutes, then stir in the boiling water until smooth.
Baking
  1. Divide the batter evenly between the prepared pans and bake for 30 to 35 minutes or until a toothpick inserted in the center comes out clean.
  2. Once baked, let the cakes cool in the pans for about 10 minutes, then remove to wire racks to cool completely.
Frosting
  1. In a separate bowl, combine cocoa powder and softened butter. Gradually beat in powdered sugar and milk until smooth, then add vanilla extract.
  2. Place one cake layer on a plate and spread frosting on top. Stack the second layer and frost the top and sides of the cake.

Notes

Wrap the cake in plastic wrap while it cools to keep moisture. For a deeper chocolate flavor, add a teaspoon of coffee to the boiling water. Feel free to decorate with sprinkles or fruits.
