Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter, softened Make sure it's at room temperature.
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
Fillings
  • 1 cup cherry pie filling You can substitute with any berry filling if desired.
  • 1/2 cup chocolate chips Optional, but highly recommended for chocolate lovers.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  3. In a large bowl, beat the softened butter and sugar using an electric mixer until light and fluffy.
  4. Add the egg and vanilla extract to the butter-sugar mixture, and mix until fully combined.
  5. Gradually add the flour mixture to the wet ingredients, mixing at low speed until just combined.
  6. Gently fold the cherry pie filling into your batter.
  7. Grease an 8×8-inch baking pan or line it with parchment paper, then pour the batter in evenly.
  8. Optionally, sprinkle some chocolate chips on top before baking.
Baking
  1. Bake in the preheated oven for about 25-30 minutes, or until a toothpick comes out clean.
  2. Let the bars cool completely before slicing them into squares.

Notes

These bars store well in an airtight container in the fridge for up to a week. You can also freeze them by wrapping them tightly first.
