Homemade Canned Strawberries

Ingredients
  

For the syrup
  • 2 cups granulated sugar
  • 1 cup water
  • 1/4 cup lemon juice Freshly squeezed is best.
  • pinch salt Optional, to enhance flavor.
For the strawberries
  • 4 cups fresh strawberries Stemmed and halved.

Method
 

Preparation
  1. Clean the strawberries by rinsing them under cold water and removing the stems. Slice them in halves or quarters as preferred.
Making the Syrup
  1. In a medium-sized pot, mix the sugar, water, and lemon juice. Bring it to a gentle boil while stirring until the sugar dissolves.
Packing the Jars
  1. Sterilize your canning jars. Pack the strawberry halves into each jar, leaving about half an inch of space at the top.
Sealing the Jars
  1. Pour the warm sugar syrup over the strawberries until just below the rim. Ensure the berries are submerged.
  2. Wipe the rims of the jars and attach the lids. Process the jars in a water bath for about 10-15 minutes.
Cooling and Storage
  1. Remove jars and let them cool completely. Store in a cool, dark place for up to a year.

Notes

Choose fresh, ripe strawberries for best flavor. Feel free to add vanilla extract or mint to the syrup for a twist.
