Preparation
- Clean the strawberries by rinsing them under cold water and removing the stems. Slice them in halves or quarters as preferred.
Making the Syrup
- In a medium-sized pot, mix the sugar, water, and lemon juice. Bring it to a gentle boil while stirring until the sugar dissolves.
Packing the Jars
- Sterilize your canning jars. Pack the strawberry halves into each jar, leaving about half an inch of space at the top.
Sealing the Jars
- Pour the warm sugar syrup over the strawberries until just below the rim. Ensure the berries are submerged.
- Wipe the rims of the jars and attach the lids. Process the jars in a water bath for about 10-15 minutes.
Cooling and Storage
- Remove jars and let them cool completely. Store in a cool, dark place for up to a year.
Notes
Choose fresh, ripe strawberries for best flavor. Feel free to add vanilla extract or mint to the syrup for a twist.
