  • 1.5 cups mashed potatoes Leftovers work well
  • 1 cup ground beef Substitute with turkey for a lighter option
  • 1 cup mixed vegetables Frozen works beautifully
  • 1 can cream of mushroom soup Or any cream soup available
  • 1 cup shredded cheddar cheese Cheese makes everything better
  • to taste salt
  • to taste pepper
  • 1 pinch paprika For a hint of excitement

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a skillet over medium heat, brown the ground beef until it's no longer pink. Drain any excess fat and season with salt and pepper.
  3. Add the mixed vegetables and cream of mushroom soup to the cooked meat and stir well.
  4. Prepare the mashed potatoes, seasoning them with salt and pepper to taste.
  5. Spread the meat and vegetable mixture evenly in a greased pie plate or baking dish.
  6. Spoon the mashed potatoes over the mixture, smoothing it down.
  7. Sprinkle the shredded cheese generously over the mashed potatoes and add a dash of paprika.
Baking
  1. Bake in the oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
  2. Allow to cool for a few minutes before serving.

Notes

Feel free to use leftover meat or vegetables. Add hot sauce or chopped onions for an extra kick. Mashed potatoes that look rustic still taste great!
