Ingredients
  

For the Roast
  • 1 whole 4 to 5 pounds beef roast (ribeye or sirloin) Choose based on preference.
  • 2 cups fresh herbs (parsley, thyme, rosemary) Herb choices can vary.
  • 3 cloves garlic, minced
  • 1/4 cup Dijon mustard
  • 1/4 cup olive oil
  • to taste Salt and pepper
  • optional Cooking twine For tying the roast.

Method
 

Preparation
  1. Preheat your oven to 450°F (232°C).
  2. Pat the beef roast dry with paper towels.
Herb Mixture
  1. In a bowl, mix together your fresh herbs, minced garlic, Dijon mustard, olive oil, salt, and pepper.
  2. Taste the herb mixture before applying it to the roast.
Coat the Roast
  1. Rub the herb mixture all over your beef roast, ensuring it is fully coated.
  2. If using, tie the roast with cooking twine to maintain its shape.
Roasting
  1. Place the seasoned roast on a rack in a roasting pan and roast at 450°F for about 15 minutes.
  2. Lower the temperature to 325°F (163°C) and continue to cook for an additional 1 to 1.5 hours, until the internal temperature reaches 135°F (57°C) for medium-rare.
Resting and Serving
  1. Remove the beef from the oven and let it rest for about 15 to 20 minutes before slicing.
  2. Slice, serve, and enjoy with your favorite holiday beverages.

Notes

Choose the right cut based on your preferences. Leftovers can be used for sandwiches or stir-fry. Don't worry about imperfections in the herb mixture.
