Preparation
- Preheat your oven to 450°F (232°C).
- Pat the beef roast dry with paper towels.
Herb Mixture
- In a bowl, mix together your fresh herbs, minced garlic, Dijon mustard, olive oil, salt, and pepper.
- Taste the herb mixture before applying it to the roast.
Coat the Roast
- Rub the herb mixture all over your beef roast, ensuring it is fully coated.
- If using, tie the roast with cooking twine to maintain its shape.
Roasting
- Place the seasoned roast on a rack in a roasting pan and roast at 450°F for about 15 minutes.
- Lower the temperature to 325°F (163°C) and continue to cook for an additional 1 to 1.5 hours, until the internal temperature reaches 135°F (57°C) for medium-rare.
Resting and Serving
- Remove the beef from the oven and let it rest for about 15 to 20 minutes before slicing.
- Slice, serve, and enjoy with your favorite holiday beverages.
Notes
Choose the right cut based on your preferences. Leftovers can be used for sandwiches or stir-fry. Don't worry about imperfections in the herb mixture.
