Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add the eggs, milk, oil, and vanilla extract; mix until smooth for about 2 minutes.
- Carefully stir in the boiling water until well combined.
- Fold in the shredded coconut.
- Divide the batter evenly between two greased 9-inch round cake pans.
- Bake for about 30-35 minutes, or until a toothpick inserted comes out clean.
- Let the cakes cool in the pans for 10 minutes before transferring to wire racks to cool completely.

Notes
For an impressive touch, top with chocolate ganache or a dollop of whipped cream with coconut flakes. Store leftovers wrapped tightly in plastic wrap in the fridge.
