Ingredients
  

For the Cupcakes
  • 1 box chocolate cake mix
  • 3 large eggs
  • 1 cup water
  • 1/3 cup vegetable oil
  • 1 cup mashed ripe bananas (about 2 large bananas)
For Topping
  • 1 can whipped cream
  • Chocolate syrup to drizzle on top
  • Maraschino cherries for decoration
  • Chopped nuts optional, for crunch

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the chocolate cake mix, eggs, water, and vegetable oil. Mix until smooth.
  3. Stir in the mashed bananas until just combined.
Baking
  1. Line a cupcake tin with colorful liners and fill each liner about 2/3 full with the batter.
  2. Bake for approximately 18-20 minutes or until a toothpick comes out clean.
  3. Allow the cupcakes to cool completely.
Decoration
  1. Top each cooled cupcake with a dollop of whipped cream.
  2. Drizzle chocolate syrup liberally over the whipped cream.
  3. Add a cherry on top and sprinkle with chopped nuts if desired.

Notes

If short on ripe bananas, microwave slightly under-ripe bananas for about 30 seconds to soften. You can also swap half of the chocolate cake mix for vanilla for a different flavor.
