Preparation
- Season the beef cubes with salt and pepper.
- In a large pot, heat up olive oil over medium-high heat.
- Add the beef in batches, searing all sides until nicely browned. Remove the beef and set aside.
Cooking
- In the same pot, toss in the onion and garlic, cooking until fragrant.
- Add the beef back to the pot along with the beef broth, carrots, potatoes, thyme, and Worcestershire sauce.
- Bring to a gentle boil, reduce heat, and let it simmer for about 1.5 to 2 hours, or until the beef is tender.
- While the stew is bubbling, boil the diced potatoes in a separate pot until soft. Drain and mash them with milk and butter.
- Season mashed potatoes with salt and pepper to taste.
Serving
- Serve the beef stew alongside the fluffy mashed potatoes. Optionally smother the potatoes in gravy.
Notes
For added greens, toss in some frozen peas or steamed broccoli just before serving. If you prefer, this stew can also be made in a slow cooker for ease.
