- In a large mixing bowl, combine the rolled oats, almond butter, honey (or maple syrup), unsweetened cocoa powder, vanilla extract, and a pinch of salt. Stir until all the ingredients are well combined.
- If using, fold in the mini chocolate chips or dried fruits into the mixture.
- Using your hands or a cookie scoop, form the mixture into small balls about one inch in diameter.
- Place the bites on a baking sheet lined with parchment paper and refrigerate for about 30 minutes to firm up.
Serving
- Once chilled, enjoy the bites on their own or add them to a lunchbox for a wholesome dessert.
Notes
You can adjust the sweetness by changing the amount of honey or maple syrup used. Store these bites in an airtight container in the fridge for up to a week.
