  • 1 cup pineapple chunks, fresh or canned Make sure juice is drained if using canned.
  • 1/2 cup diced red bell pepper Adds color to the salad.
  • 1/2 cup chopped celery For added crunch.
  • 1/4 cup red onion, finely chopped Just enough to keep the flavor zesty.
  • 1/2 cup mayonnaise Can be substituted with Greek yogurt for a lighter option.
  • 1 tablespoon honey Adds sweetness.
  • 1 tablespoon soy sauce Provides umami flavor.
  • to taste Salt and pepper Adjust according to preference.

Preparation
  1. In a large bowl, combine the shredded chicken, pineapple chunks, diced red bell pepper, chopped celery, and red onion. Stir gently to combine.
  2. In a separate small bowl, whisk together the mayonnaise, honey, and soy sauce. Add salt and pepper to taste.
  3. Pour the dressing over the chicken mixture and stir until well coated. Cover and let the salad chill in the fridge for about 30 minutes.
  4. Layer a bed of lettuce on a plate and generously scoop the Hawaiian Chicken Salad on top before serving.

Notes

You can prepare the salad a day in advance for better flavor. Don’t skip the chill time—it really enhances the taste. Try using mango or diced apples if you don't have pineapple.
