Ingredients
  

Popcorn Ingredients
  • 1/2 cup Popcorn Kernels About 16 cups popped
Caramel Ingredients
  • 1 cup Unsalted Butter 2 sticks
  • 2 cups Brown Sugar Packed
  • 1/2 cup Light Corn Syrup
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Baking Soda
  • 1 teaspoon Vanilla Extract

Method
 

Preparation
  1. Pop your popcorn kernels. Use an air popper or pop them on the stovetop, allowing them to cool before transferring to a large bowl.
Caramel Making
  1. In a medium saucepan over medium heat, melt the butter. Stir in brown sugar, corn syrup, and salt. Bring to a boil while stirring continuously, then let bubble for 4-5 minutes without stirring.
  2. Remove from heat and quickly whisk in baking soda and vanilla extract.
Combining
  1. Pour warm caramel over the popped popcorn and gently toss to coat.
Baking
  1. Preheat oven to 250°F (120°C). Spread the caramel-coated popcorn onto a lined baking sheet and bake for 1 hour, stirring every 15 minutes.
Cooling and Serving
  1. Remove from oven, let cool completely, then break into chunks and serve or store in an airtight container.

Notes

For extra crunch, add peanuts or pretzels, or sprinkle with pumpkin spice for a fall vibe. If the caramel sticks, place it in the oven for a few minutes to soften.
