  • 4 cups diced potatoes russets work wonderfully
  • 2 cups cooked ham, diced leftover holiday ham, deli ham, or turkey can be used
  • 1 small onion, finely chopped
  • 1 can cream of mushroom soup (10.5 oz) can substitute with cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese you can never have too much cheese!
  • Salt and pepper to taste
  • 1 teaspoon garlic powder for extra flavor
  • 1 cup frozen peas optional for color and nutrients

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the diced potatoes, diced ham, and chopped onion. If using peas, add them too.
  3. In another bowl, mix together the cream of mushroom soup, sour cream, shredded cheddar cheese, garlic powder, salt, and pepper until well combined.
  4. Pour the creamy mixture over the potato and ham mixture and gently fold until everything is well coated.
  5. Transfer the entire mixture into a greased 9x13 inch baking dish and spread it out evenly.
  6. Cover with aluminum foil and bake for about 45 minutes.
  7. Remove the foil and bake for an additional 15-20 minutes until the top is golden and bubbly.
  8. Let it cool for a few minutes before serving.

Notes

You can leave the potato skins on for added texture and nutrients. This dish can be prepped a day ahead and stored in the fridge, adjusting baking time as needed.
