Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the diced potatoes, diced ham, and chopped onion. If using peas, add them too.
- In another bowl, mix together the cream of mushroom soup, sour cream, shredded cheddar cheese, garlic powder, salt, and pepper until well combined.
- Pour the creamy mixture over the potato and ham mixture and gently fold until everything is well coated.
- Transfer the entire mixture into a greased 9x13 inch baking dish and spread it out evenly.
- Cover with aluminum foil and bake for about 45 minutes.
- Remove the foil and bake for an additional 15-20 minutes until the top is golden and bubbly.
- Let it cool for a few minutes before serving.
Notes
You can leave the potato skins on for added texture and nutrients. This dish can be prepped a day ahead and stored in the fridge, adjusting baking time as needed.
