Ingredients
  

For the Steak
  • 2 pieces ribeye steaks (about 1-inch thick) Feel free to swap with your favorite cut.
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Fresh herbs (like rosemary or thyme, if you have them on hand) Dried herbs can also be used—start with a smaller amount.
For the Mashed Potatoes
  • 4 large russet potatoes, peeled and cubed
  • 1/2 cup milk Adjust for desired creaminess.
  • 4 tablespoons butter
  • Salt and pepper to taste
For the Green Beans
  • 1 pound fresh green beans, trimmed
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Squeeze of lemon juice Optional, for a refreshing zing.

Method
 

Preparation of Mashed Potatoes
  1. Start by boiling the cubed potatoes in salted water until they're fork-tender, usually about 15-20 minutes.
  2. Drain them and return them to the pot. Add the butter and a splash of milk, then mash to your desired creaminess.
  3. Season with salt and pepper to taste.
Cooking the Steak
  1. Heat a grill or grill pan over medium-high heat and drizzle with a little olive oil.
  2. Season the steaks generously with salt and pepper, and add minced garlic and fresh herbs if desired.
  3. Grill the steaks for about 4-5 minutes on one side, then flip and cook for another 3-4 minutes for medium-rare.
  4. Allow the meat to rest for at least 5 minutes before slicing.
Cooking the Green Beans
  1. Bring a pot of salted water to a boil and add the green beans.
  2. Blanch them for about 3-4 minutes until bright green and tender-crisp.
  3. Drain and plunge into an ice bath to stop cooking. Drain again and drizzle with olive oil, seasoning with salt and pepper.
  4. Finish with a squeeze of lemon juice if desired.

Notes

You can boil the potatoes a day in advance and mash them right before serving. If you find yourself over-mashing potatoes, don't worry—they're still delicious!
