Grilled Squid with Garlic, Chili & Parsley

Ingredients
  

Main Ingredients
  • 1 pound Squid, cleaned and cut into rings
  • 4 cloves Garlic, finely chopped
  • 1 Red chili, seeds removed and finely chopped Adjust based on heat preference
  • 1/2 cup Parsley, finely chopped
  • 1/4 cup Olive oil
  • to taste Salt & pepper
  • Lemon, for serving

Method
 

Preparation
  1. In a bowl, combine the chopped garlic, red chili, parsley, and olive oil. Stir well and add salt and pepper to taste.
  2. Add the squid rings to the marinade, tossing until coated. Allow to marinate for 15-20 minutes, or up to an hour for better flavor.
Grilling
  1. Preheat the grill to medium-high heat. If you don’t have a grill, a grill pan can be used.
  2. Once hot, add the squid rings in a single layer. Grill each side for 1-2 minutes until opaque and slightly charred.
Serving
  1. Remove squid from grill and place on a platter. Squeeze fresh lemon juice over the top. Serve with salad or crusty bread.

Notes

Don’t overcrowd the grill. Squid cooks fast, so keep grill time short to avoid rubberiness. Feel free to add other spices or herbs.
