Ingredients

  • 1 pound fresh squid, cleaned and cut into rings
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 red chili, thinly sliced Adjust based on your heat preference
  • 1 handful fresh parsley, chopped
  • to taste salt and pepper
  • 1 juice of lemon

Method
 

Preparation
  1. Start by patting the squid dry with paper towels.
  2. In a large bowl, combine the squid with 2 tablespoons of olive oil, minced garlic, sliced chili, salt, and pepper. Toss everything together and let it marinate for about 15 minutes.
Grilling
  1. While your squid is marinating, fire up your grill or grill pan.
  2. Once the grill is ready, place the squid rings on it. Grill for about 2-3 minutes on each side until they are opaque and slightly charred.
Finishing Touches
  1. Remove the squid from the grill and toss it back in the bowl with the remaining olive oil, chopped parsley, and lemon juice. Mix well.
  2. Plate the grilled squid and garnish with additional parsley if desired.

Notes

Tips: Don't overcook the squid for tenderness. Consider mixing in other herbs, feta, or adding grilled cherry tomatoes for variations. Leftovers can be stored in an airtight container for up to two days and reheated in a skillet.
