Ingredients
  

Shrimp Marinade
  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon paprika
  • to taste Salt and pepper
Wrap Ingredients
  • 4 large whole wheat tortillas or your favorite wrap
  • 1 cup mixed greens (spinach, arugula, or whatever you have on hand)
  • 1 cup cherry tomatoes, halved
  • ½ cup cucumber, diced
  • Your favorite dressing (think lime vinaigrette or ranch for dipping)

Method
 

Preparation
  1. In a bowl, toss the shrimp with olive oil, garlic powder, paprika, salt, and pepper. Let them marinate while you prepare the rest of your ingredients.
Grilling
  1. Heat your grill over medium-high heat. Once hot, toss the marinated shrimp onto the grill. Cook for about 2-3 minutes on each side, or until they turn pink and opaque.
Assembly
  1. Grab your tortillas and layer them with a handful of mixed greens, grilled shrimp, avocado slices, cherry tomatoes, and cucumber. Drizzle your dressing over everything.
  2. Carefully roll the tortillas, tucking in the sides as you go. Aim for snug wraps that aren't overstuffed.
  3. Slice your wraps in half and enjoy immediately, or pack them for work.
