Ingredients
  

Chicken and Marinade
  • 1 lb boneless, skinless chicken thighs Can substitute with chicken breast, shrimp, or tofu.
  • 1 cup teriyaki sauce Half for marinating, half for brushing.
Vegetables and Accompaniments
  • 1 fresh pineapple, peeled, cored, and sliced into rings Grilled for added sweetness.
  • 8 pieces taco-sized tortillas Warmed for serving.
  • 1 piece avocado, sliced For topping.
  • 1 medium red onion, thinly sliced For topping.
  • 1 cup shredded cabbage For topping.
  • to taste lime wedges For serving.
  • to taste cilantro For garnish.

Method
 

Marinate the Chicken
  1. Place the chicken thighs in a bowl and pour half of the teriyaki sauce over them. Let it sit for at least 30 minutes.
Grill the Pineapple
  1. Heat your grill or grill pan over medium-high heat. Grill each ring of pineapple for about 3-4 minutes per side, until grill marks appear.
Cook the Chicken
  1. In the same grill pan, cook the marinated chicken for about 6-7 minutes per side or until cooked through (internal temperature should be 165°F). Brush with remaining teriyaki sauce in the last few minutes of cooking.
Assemble Your Tacos
  1. Once the chicken has rested, slice it into bite-sized pieces. Warm the tortillas, and layer the chicken, grilled pineapple, avocado, red onion, and shredded cabbage.
  2. Squeeze lime juice on top.
Serve and Enjoy
  1. Garnish with cilantro and serve with extra lime wedges on the side.

Notes

If short on time, grill the chicken and pineapple simultaneously. Feel free to add your favorite toppings like diced tomatoes, jalapeños, or a drizzle of mayonnaise.
